Papa Fink's Burgers
Burgers are simple but people tell me that mine are some of the best they ever ate.
The next time you make burgers use your favorite seasonings but try some of my secret tips:

1. Do not use 90% or 95% lean meat. Use 80% or 85%. The fat gives the burger it's flavor and most of the fat comes out in the grilling.

2. Never...never buy preformed patties. Make them yourself and handle the meat as little as possible.

3. Cook over a very high heat for a short time. Under 2 minutes per side for rare.

Most people over cook their burgers with meat thats too lean and they really don't taste very good.

Egg Salad Sandwiches
INGREDIENTS

* 8 hard-cooked eggs, diced
* 1 cup mayonnaise
* 1/4 cup dried onion flakes
* 1/2 teaspoon salt
* 1 teaspoon mustard powder
* 1/4 teaspoon garlic powder
* 1/4 teaspoon black pepper
* 1 teaspoon dill weed
* 8 slices white bread

DIRECTIONS

1. In a bowl, gently mix the eggs, mayonnaise, onion flakes, salt, mustard powder, garlic powder, pepper, and dill. Cover, and refrigerate 8 hours, or overnight. To serve, spread equal amounts on 4 slices bread; top with remaining bread slices to make sandwiches.

Note

If using promptly, begin by placing onion flakes in a small bowl and adding 1/4 cup hot water. Let sit 10 minutes, or until soft. Drain and discard the water, then add the rest of the ingredients to the onion, blending well.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan
INGREDIENTS

* 8 cloves garlic
* 3 tablespoons olive oil
* 1 1/2 pounds potatoes, peeled and cubed
* 1 1/2 pounds sweet potatoes, peeled and cubed
* 1/2 cup milk
* 1/4 cup butter
* 1/2 teaspoon dried rosemary
* 1/2 cup grated Parmesan cheese
* salt to taste
* ground black pepper to taste

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Put garlic in small ovenproof bowl, and drizzle with olive oil. Roast for 30 minutes, until very soft. Cool, peel, and reserve oil.
2. Cook potatoes and yams in a large pot of salted water until tender, about 20 to 30 minutes. Drain, reserving 1 cup liquid.
3. Place potatoes in a mixing bowl. Add milk, butter or margarine, rosemary, garlic, and reserved olive oil. Mash until smooth as desired, adding reserved cooking liquid as needed. Mix in 1/4 cup cheese. Salt and pepper to taste. Transfer to a buttered or oiled 8 x 8 x 2 inch baking dish. Sprinkle with remaining cheese.
4. Bake for 45 minutes, until heated through and golden on top.

Baked Penne with Italian Sausage
INGREDIENTS

* 1 (12 ounce) package dry penne pasta
* 1 pound mild Italian sausage
* 1 cup chopped onion
* 1/2 cup white wine
* 2 teaspoons olive oil
* 1 (15 ounce) can tomato sauce
* 1 (14.5 ounce) can diced tomatoes with garlic
* 1 (6 ounce) can tomato paste
* 2 cups shredded mozzarella cheese

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. Place sausage and onion in a large, deep skillet. Cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
3. Bake in preheated oven for 20 minutes, or until cheese is melted.
